Ingredients:
- 1 1/4 cups gluten-free all-purpose flour
- 1/4 cup almond flour
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 2-3 tablespoons ice water
- 3-4 assorted winter citrus fruits such as blood oranges, grapefruits, and Meyer lemons, thinly sliced
- 1/4 cup honey
- 1 tablespoon fresh thyme leaves
- Flaky sea salt, for sprinkling
Instructions:
Gluten-free all-purpose flour, almond flour, sugar, and salt should all be put into a food processor and mixed together
Use pulses to mix
Pulse the mixture until it looks like coarse crumbs after adding the chilled butter cubes
One tablespoon at a time, add ice water and pulse until the dough comes together
Place the dough on a lightly floured surface and roll it out into a disk
Put it in the fridge for at least 30 minutes after wrapping it in plastic wrap
Warm the oven up to 190C 375F
Put parchment paper on the bottom of a baking sheet
Put some flour on a surface and roll out the dough into a circle that's about 12 inches across
Place the dough on the baking sheet that has been prepared
Place the sliced citrus fruits on top of the dough in a way that they overlap, leaving a border around the edges
Put honey on top of the citrus slices and fresh thyme leaves on top of that
Fold the dough's edges over the fruit, making pleats if needed
Use water to brush the edges of the dough, and then sprinkle it with flaky sea salt
Put it in the oven for 30 to 35 minutes, or until the crust is golden brown and the citrus is soft
Let it cool down a bit before you serve
