Crockpot Mexican Rice and Beans



This Crockpot Mexican Rice and Beans recipe is perfect for a busy day. Just toss the ingredients into the slow cooker and let it do all the work. The result is a delicious and flavorful dish that the whole family will love.

Ingredients:

  • 1 cup long grain white rice
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 can 15 ounces diced tomatoes
  • 1 cup vegetable broth
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, diced avocado, shredded cheese, sour cream

Instructions:

In a slow cooker, combine rice, black beans, diced tomatoes, vegetable broth, onion, bell pepper, garlic, chili powder, cumin, salt, and pepper

Stir well to combine

Cover and cook on low for 4-6 hours or until rice is cooked through and liquid is absorbed

Once done, fluff rice with a fork

Serve hot with optional toppings like chopped cilantro, diced avocado, shredded cheese, and sour cream
